Title: How To Marinate Sun-Dried Tomatoes+

Yield: 1 Recipe

15 Sun-Dried tomatoes
1/4cExtra Virgin Olive Oil or enough to cover tomatoes
2lgGarlic cloves, sliced
4lgLeaves basil or fresh thyme sprigs

1. Pour boiling water to cover over the sun-dried tomatoes and cook for 2 minutes. Remove from the heat, cover and let stand for 2 to 3 minutes; drain.

2. Place rehydrated tomatoes in a bowl and layer with remaining ingredients, then pour olive oil over all.

3. cover and let marinate at room temperature for at least an hour, or refrigerate for up to 5 days.

One suggestion for serving: Spread thinly sliced baguettes, liberally with either chevre or cream cheese. Top with a julienne of marinated sun-dried tomatoes,(above), and a bit of chopped basil.
